On this occasion, we have prepared some pumpkin pancakes, a very easy and highly healthy recipe. As many of you know, the pumpkin represents a great contribution of fiber and water for children. In addition, it offers a low calorie content, which makes it ideal in diets against obesity and for pregnant women.
- 125 gr of pumpkin puree
- 125 gr of wheat flour
- 1/2 tablespoon ground cinnamon
- 30 gr of brown sugar
- 1 tablespoon (soup) baking powder
- 180 ml milk
- 1 egg
- 15 ml olive oil
- 15 ml of lemon juice
- 1 teaspoon salt
We teach you how to make a recipe with pumpkin, very easy and quick to make. In addition, it is a healthy recipe. Follow our step by step, and you will get some fluffy and delicious pancakes.
1- In a bowl, mix the flour with the cinnamon, the sugar, yeast and salt. Reserve.
2- In another bowl, mix the milk with the pumpkin puree and beat with the mixer.
3- Add to the latter mix the beaten egg, the oil and the lemon juice.
4- When everything is mixed add the first flour mixture, little by little.
5- Beat everything until you get a uniform and airy paste.
6- Spread a small pan with butter or margarine and bring it to a high heat. When the butter begins to heat, lower the heat and, with the help and measure of a ladle, pour the mixture into the pan, trying to fill its entire round bottom.
7- When you notice that the pancake has bubbles and comes off easily from the pan, it's time to turn it over and then remove it from the pan.
You can serve the pancakes with cream, honey, dulce de leche, with the syrup that the children like the most, or alone as we did.
